Quick Vegetable stuffing Recipe for Toast sandwich

Ingredients for the stuffing
Boiled & peeled potato 1 big
Grated carrot 1 Tablespoon
Chopped onion 1 Tablespoon
Frozen peas 8-10 numbers
MDH paratha masala 2 heaped Tablespoons

Method
  1. Mash the potato nicely & mix all the ingredients to form a smooth dough
  2. Apply little butter to 2 slices of bread,spread 2 Tablespoon of the stuffing or as required & toast it in the toaster.
  3. You don't require a chutney for this sandwich,serve it hot with ketchup.

Nan Khatai makes 10 pieces

Ingredients
Maida 100 gms
Powdered sugar 60 gms
ghee/vanaspati 70 gms
Curd 1 tsp
Soda-bi-carb 1/4tsp
Cardamom powder 1/2 tsp

Method
  1. Sieve Flour
  2. Cream ghee/vanaspati & sugar till light & fluffy
  3. Add soda-bi-carb,curd & cardamom powder.
  4. Mix with the flour,make dough,knead it gently.
  5. Divide the dough into 10 equal portions & form it into smooth round balls.
  6. Place them on baking tray leave it aside for 50 min for proving
  7. Bake at 150 degree for 30-45 mins or till done
  8. You may add cashew pieces on dough before baking

Jaljeera

Ingredients
Soaked tamarind 25 gms
Mint leaves paste 1/4 tsp
Black salt 1/4 tsp
Sugar 50 gms
Salt to taste
Pepper powder to taste
Roasted jeera powder 1/4 tsp
Water 250 ml
Khara bundi 10 gms
Crushed ice

Method
  1. Extract tamarind pulp & strain
  2. Combine mint paste,tamarind pulp,water,black salt,pepper & jeera powder & strain.
  3. Serve with crushed ice & khara bundi

Coconut Barfi

Ingredients
Fresh Grated Coconut 1 cup
Sugar 3/4 cup
Mava 100 gms
Ghee 2 tsp
Cardamom powder 1/2 tsp
Saffron as required
Method

  1. Blend coconut,sugar,mava.
  2. Add ghee & cook on medium flame with constant stirring.
  3. Add cardamom powder,saffron & continue cooking till the mixture leaves the side of the pan & ghee seperates out.
  4. Grease a thali/plate/baking tray,pour the mixture on it & level using the back of a katori or spatula.
  5. Cool & cut into squares.

Stuffed Kulcha 2 Portions

Ingredients for dough.
Maida 100 gms
Curds 20 gms
Yeast 4 gms
Powder sugar 4 gms
Ghee 1 tsp
Baking powder 1/4tsp

Ingredients for the stuffing
Boiled,peeled & mashed potatoes 100 gms
Green chilli ginger paste 1 tsp
Salt to taste
Method
  1. Sieve flour baking powder & salt together
  2. Make a well in the centre,crumble yeast & sprinkle powdered sugar on it pour little water & leave aside for 10 mins,till gas bubbles evolve
  3. Add more water & curds to obtain a soft dough.
  4. Add ghee & knead into a dough till soft & smooth
  5. Divide into 2 equal portions & ferment for 45-50 minutes
  6. Mix mashed potatoes & ginger chilli paste & salt together
  7. When the dough becomes double in size,take 1 portion flatten it roll into s small circle,stuff the potato mixture into it & roll a big kulcha approx 6-7'' diameter.
  8. Keep aside for 10 minutes & roast on a tava
  9. Apply little ghee & serve hot
